I've never done any meat fermentation. I haven't messed much with fermenting fish. But the fermented shark from Iceland is amazing. It actually went to the last family that still makes this stuff. Garam is traditionally associated with sort of Roman cuisine, but actually that technology comes from Eastern Asia and it's nothing more than fermented fish sauce.
