The Seven Things You Need to Know About Olive Oil

Olive oil is meant to be consumed at room temperature. If you heat an olive oil, the heat oleic acid, past its smoking point, can actually flip that double bond and create a trans fatty acid right in your skillet. Polyunsaturated fatty acids are also good for several reasons because they're anti-inflammatory but there's more of them out there. Saturated fat isn't as bad as we thought it was; dairy saturated fat is not pro-inflammatory either. Medium chain triglycerides -- these are 10 to 14 carbons alone - end up going straight to the liver.
