In America we have gravitated towards animals that produce food quickly in confinement, which has led to very weak genetics. You do not want to get the animals that need to be pampered. If you don't care which kind of bird, I would probably recommend animals that are acclimated to your environment and can live in a system without antibiotics or growth hormones. There are certain sheep and goats that would be good for you, man, that are more acclimatized to colder weather. Duck eggs are going to be less allergenic and more nutritious than chickens in every measured nutrient.
