The Specialty Coffee Association is the industry's major trade group. Christopher Hendon published a book called Water for Coffee in 2015. Frank Neuhausen at BWT partnered with Zurich University of Applied Sciences to study how magnesium affects coffee's flavor. The outcome was that there is a clear, strong remarkable difference in the taste and also in the chemical composition of the coffee.
