Is $500 a Person a Bad Idea?

I worry about that part of it. There is a difference in my mind anyway between being low paid and no paid. I've been an unpaid intern and I've also managed interns who either were unpaid or had like a very small stipend. So much of my energy went into creating this experience that it just was like in the end not worth it really for me. The other thing that I actually don't quite understand is the top line of these businesses. If it's that special, if you attract an elite group of people who really care about that kind of dining, $500 is just ridiculous.
