The Importance of Experience in Food

I want to better understand something else in culture so I can get a better lay of the land in food. And right now, things are moving so fast culturally in food that what's popular is not thrilling. Because people are copying at a record clip. Harder to find the right environment to take chances. It's too expensive to open here. Too expensive to make a mistake.
