The Benefits of Blending Beers
A lot of burrows, even today, that'll blend older and newer beer. Same thing's done in the wine industry, for example. I've become totally convinced of it by a couple of beers I've done with Goose Island. And it's a way of getting aged flavor into a younger beer. So you can never get the combination of flavors and character from a single fermentation - which is what we're trying to do here.
