Jillian Gualtieri: In pre-19th century, the only time that you would dine outside of your home was when you were traveling or visiting friends. She says rich people often employed folks to cook for them because it's someone's entire occupation to make dinner. The French Revolution tore the old system of dining to the ground and created a new one in which aristocrats could share their culinary skills with others.
