If I write tests in a test first manner and that's what I usually do, I will drive real functionality. As you get real value that you can actually demo, you can start throwing in invalid values. So, I will tell people you should stop writing tests for a method when you feel comfortable about it. You're going to get to that feeling after you have enough tests.
