In later cases, we have contemporary documentation of how the relics were collected. But even after they were collected, they weren't always store in supersecure conditions. Priests and nuns are supposed to be trustworthy like the police. They aren't always trustworthy, but it's part of their job. Unless you have evidence impeaching a particular priest or nun who had custody, then i think we need to take them at their word.
