The Disadvantages of Curries
In India and the subcontinent, curry is not a flavor, it's an entity. In Hindi, there is a separate word which means heat. 98.9 or 99% of the spices we use are flavor producing spices and aromatics. So if a recipe calls regaram masala, is that an almost entirely useless thing? There's a thousand, it just depends on what kind of blend we want.
