How to Refrigerate Organs Safely

When you kill an animal, the offal is the most perishable part. And so they would eat like the liver and the kidneys very quickly. Allow me to share a little bit of refrigeration science here. After an animals slaughtered, some matabolic reactions still go on in muscle meat. A lot of the stored energy is transformed into an acid that lowers the p h of the meat - making it harder for microbes to grow. So organ meats spoil more quickly.
