Gatce: I think suves ag a, to me, is the way to go on this. What they say is its temperature thing. If you can get the middle part of that meat, like if it were an antelope or an elk, this same and then let's say, like this one, i wrapped, seared the outside,. wrapped it in tinfoil, let it rest, through it in the fridge overnight. But if i were doing the elk, i would have got the exact same temperature. He says he could put a thermo couple through the bag into the meat and actually check the core temperature during cooking.
