The National Cuisine of the USSR
The idea of a national cuisine is something very recent and extremely constructed. And how it is constructed is exactly what I set out to investigate in national dish. When you think about nations, they are so not old. Think about Italy. 1860s is when Italy starts becoming a nation from this hot pot of dachias and principalities. At the time of French Revolution in 1789, less than 25% of people spoke French or understood French. That was really like the first serious nation with self-determination and the common law and common language.
