The Differences in Copper Contents in Different Foods

In standard diets, people generally aren't eating liver and other organ meats. And so when you're selecting from among people with standard diets, vegetarian diets are usually going to be richer in copper. Copper is somewhat less bioavailable because of phytate and other anti-nutrients in plant foods. The greater concentration of copper in plant-based diets overcomes that difference in absorption.
