Is There a Difference Between Oak and Oak?
The old way of just assuming and extrapolating from five % might get you into a little bit of trouble, because every barrel is going to be slightly different. So your solution, it sounds like, tests each each one individually. It customizes the e, the prese process, for each and every barrel. And if there's something going on with the wine, it's going to get picked up with those reading so if there's a specific barrel that has maybe too much oxygen or some microbl activity, the wine maker's going to be able to pick that up.
