You Can't Doubt Everything
I remember reading Descartes' meditations in the first year of university when I was 1718. And I remember the sensation of understanding for the first time what he was saying about you can doubt everything. Now, of course, I reject that now. But at that point it was a profoundly mind-bending, expanding experience. He just didn't go the extra step. It was fallibleism almost. So whether or not that's the most, but those two things stand out in my mind.
