The Importance of Open Source in Hospitality
I love hearing from other people who've done interesting things and then pulling out things that I can take with me into what I'm doing. One of our close friends is, well, two of them are Renee and Nadine Ritzepi. So Renee is the creator of Noma, like the world's best restaurant many years out of many years. And one of the reasons why we got tight is if you go to that, it feels like a startup model,. Like there's nothing continuous on the menu ever. It is constantly being reinvented.
