How to Cook a Roast Chicken

The most famous roast chicken, you know, among chefs in America. Let it hang out in the fridge for a few days with air circulating around it and have that concentrate the flavor. You can do that with fish as well; people generally think fish has to be eaten as fresh as possible. Rinse them, dry them, lint-free towels, paper towels. And then just do the same thing on a on a sheet pan. Just two days at the most. If it's a fatty fish like salmon or mackerel, then you could do up to four days.
