What Is a Russ?

Three out of the five mother sauces really begin with a rue. A rue is just flour and fat, im cooked so that the flour doesn't taste like raw flour any more. You can make a rue an infinite number of ways but the three basic rue are a white rue, which is just butter. And then there are darker rues, a that are all in the family of a brown rue.
