Mark Pendergrass is an author of a number of books about coffee, including uncommon grounds. During the Napoleonic era, Napoleon didn't want to rely on anything that was imported. He helped to develop sugar beads, and he tried to get the French to rely on roasted chicory. In New Orleans with the French influence there, a mixture of coffee and chicory is quite popular.
