How Ice Made Food Sourcing

By the 18 sixties, ice was allowing those brewers to brew year round, even during the hot summer months. Markets used ice to keep their products fresh, as did food processors and distributors in the city. Meat that was slaughtered and dressed in chicago could be sold in new york meat markets by the 18 seventies. Butter from the midwest could take ice chilled trains to new york and then either be sold there or actually even exported in ice cooled ships to europe.
