"I realized that restaurants was a much different game than I thought it was going to be my first day of class," he says. "They teach you in culinary school, there's three things to think about when you're opening a restaurant." The first one is location,. the second one is location, and the third one is location. Where are they located? Also just understanding how do restaurants succeed? He thinks we have this misnomer: If it's a great chef and it's great food, it's automatically going to be successful.
