The Role of Authenticity in Restaurant Ratings

The study looked at a set of restaurants in the Los Angeles metropolitan area. People regard as authentic they tend to rate the restaurant more highly when they see a high rating or low rating rather than a B or C grade for health. The authenticity provided a buffer our protection against a low sanitation rating and that you see often in ethnic restaurants.
