If you haven't got like a good interview guy that you've constructed to answer specific research questions then maybe your interviews are all different. You're interviewing people about slightly different things in each of your interviews and therefore you're not seeing those themes emerge when you come to do your analysis. It could be one reason it's quite rare to have people have completely different experiences and say completely different things so as you start to interview another person you start to see those themes cropping up. If you're continuing to do interviews you're not really learning anything new but if you've exhausted all the possible say personas that you should have recruited for or use cases then you're in a pretty good position to
