What Is Backlover?

Of the top 20 countries that consume the most sugar, five are in the middle east. Sugar was widely available in the Middle East for a long time before it became common in the west. Backlave is one of those dishes where it's tricky to pinpoint an exact point of invention. You can use different nuts, so turkish backlove and iranian baclave often uses pistachios - but they all have that rich syrup that is very defining texture.
