The Golden Age of Mustard
De jon becomes the number one capital of mustard in 1856, when a man substitutes verjous for vinegar and unprepared mustard. That's nutrient rich component to the soil. So mustard had some of its ups and downs as it goes through geopolitics. It does decline a little bit in the early 18th century because people were able to get other sorts of spices that they couldn't afford before.
