There's three themes emerging here for me. First is this association with tiredness linking that to grabbing the stuff that gives them a sugar rush and perhaps linking that to emotional eating. Perhaps the other one is the accessibility to healthy foods. You bring your own food in, which at least you're able to then try and get that balance. Then I'm surprised that you guys are taking breaks because what I hear a lot of from shift workers is actually that they have super regular meal patterns.
