How to Infuse a Vinegar
When infusing do you just drop the flavor into the vinegar as it's during the maturing process or do you create the vinegar first. For a food safety perspective it's much better if you created the vinegar first and then once it's very acidic then you can start infusing your plants and roots mushrooms. One of my favorite was smoked mushroom and seaweed for example into a mugwort beer vinegar which is an old beer that i make to with the viking used to do it.
