Production manager of Hallen Morn Sea Salt Company, Ronan Burns. We pump 20,000 litres a day which will be created about 200 kilos of salt. So we're in here. We've got little huts with two pumps and two timers. The pipes are about 100 feet out into the streets. And that's our raw material for making salt. I'm going to show you how this water is turned into salt. But first let's get a chef's view on why salt and the right salt is important.
