How Did They Make Their Own House Wine?

Te nicteri ye is a late harvest wine that remains on the vine for 20 days to one month after the natural ripening of the grape. They were all gathering together to do the nichtery, not to sleep at night and press the grapes by fit. Used to ferment an age in old dog barrels. There was a tradition in making barrels, oak barrels in santo rini. And they used to seal the barrels with cement oo. But they left blank in between te they didn't top up the barrels. Why? Because they might live it like that for at least three or five years. So they might have a refermentation. This is what we don't follow
