The brewery we're looking at today is called Mukai Shuzou. It was founded in 1754 by Kuniko Mukai, one of the first female tojis in Japan. She went to agricultural school to study sake and met some wonderful professors there. They introduced her to red rice which she thought would be eye-catching so that sake can make an impression again.
