How to Isolate and Brew With Wild Yeast

Tim started off in a different discipline pretty pretty hard nose my molecular biology come out of college and his first career was in forensic biology in Texas. He landed a gig with Goose Island in 2015 just in the quality assurance lab and he's been there since. We're going to talk about foraging methods isolation methods to screen select and use wild yeast in both pilot and commercial scale brewing. And we'll talk about methods for harvesting isolating selecting and eventually get into screening and selection so how you pick these yeasts once you found them and then brewing with them.
