Black holes evaporate very, very slowly. The bigger the black hole, the slower it is to evaporate. We don't know if the universe is stable. It could instead be meta stable. These are in fact more stable than our own universe. If this is true, then it may still take a very, very, very long time for our universe to tunnel quantum tunneling as the current state it is in to an even lower energy state.
