Why Are We Eating More?

American consumption of dairy has gone down slightly since 1960. But vegetable oil line that is going straight up? We had 276 calories per day in 1960 from seed oils. 699 calories per day from seed oils in 2017. And the last graphic that I want to show is trends in plant versus animal food consumption. Animal foods have stayed approximately the same, and plant foods have gone up significantly. That's what accounts for the increase in meat.
