How to Ferment Foods
Kefir is a fermented drink made from milk. The yeast breaks down sugars that may be difficult to digest. Because of this, Kefir has almost no lactose in it. Many ancient people also used yeast to help in food storage. Fermenting foods in this way is called pickling. It makes food last longer and changes the flavour. Kimchi is one of the most famous pickled foods from Korea.
