The Challenges of Making Cider

I got started in the whole cider thing just before the whole cider renaissance happened in the US. I grew up in apple country, excuse me, in the northeast and I drank all kinds of stuff ever since my hands were big enough to pick up apples. And there's some really challenging material. The American consumer wants to have their mott's apple juice from their little sippy cup when they had his little kid. They want some bubbles in it and some alcohol. As a cider drinker, I like the real adventurous stuff, the wild ferments and all kinds of weird off tones but that just doesn't sell.
