How Can You Scale Up Your Ice Cream Business?
When I was a kid, we probably made 60,000, 70,000 gallons of ice cream a year for our dozen stores. We were on a pace this year to make probably 1.5 million gallons ice cream. The real ingenuity of what we did was we scaled up an artisan process without scaling it up. It's like, we never really, people say, well, who's your competition? And we're like, nobody.
