Xorg vs Desktop Environments - Which Is Better?

Is there any privacy security difference to take into consideration of choosing a desk top environment or window manager? Or is the best solution to use the generic, flagship version to blend into the main crowd and to get regular up dates. That's a very loaded question that's going to depend on a ton of things.
