George howell started out grinding coffee in the men's room of a boston restaurant. He soon realised he could make a business out of this, and opened his first roastery on harvard square. His friend erna became an important figure in the development of specialty coffee. She would buy much smaller quantities of coffee from particular origins to sell to small roasters as what she called specialty coffee.
