Do We Need Old Oak or New Oak?

There are 600 different species of oak out there. A lot of em aren't suitable for barrels, but there's a lot of different options. As far as experiments into flavor, we're kind of limited because we like to keep products that we can readily get our hands on. But i would think that another thing that you've got to figure out is, what is the impact of or our current geography and really what's happening on earth of do have old oak versus new oak? What can we sustainably create a business out of depending on where we're getting our oak from?
