The pistachios are growing out of volcanic slabs that have been laid down over the passage of time. Mount etna is still an active volcano, and up until very recently it had these huge explosions,. It grew in height by a hundred feet. The soil has all these minerals in it, which, over time, make it much more fertile. Which is better value, shelled or unshelled?
