Are We Really Evolving to Eating the Best Foods for Humans?

There's evidence that when we transitioned from a hunter-gatherer diet to a pastoralist diet with more grains, our health went into the toilet. We're obviously a very unhealthy group of people. So why would it not be the case that the foods available to wild humans, meat, organs, fruit, honey, and perhaps tubers and vegetables, as survival fall back foods, but not optimal foods? Those are probably the best foods for humans to eat.
