Because it's fungus. It's the little pasta stars with cooked in chicken broth. Like pecorino or parmesan, not shake cheese, but like real grated cheese. Some recipes tell you to whisk an egg in, some don't. You want it to go kind of custardy. Warm and salty and starchy. Great for when you feel sick.
