What Are the Different Types of Phenolics?
The main types of phenolics I think you should know about their anthocyanins which are responsible for color. Polyphenols means that you have a phenolic group which is a chemical structure but then sort of replicated. volatile phenols as well and those are much smaller compounds that consist of just one phenolic group and those are the things that you can smell. So there's a range of phenolic aromas that can be found in wine. Are they primary, secondary or tertiary? It likely to depends on the aroma and when it came about. The flavors you get in wines as they age those tertiary aromas. Yes. And I always think of grapes in the grape
