What's the Structure of Water?
Water is an extremely complicated substance. When you look at it microscopically in a liquid form, for example, it's got all these different sort of patterns of molecules that are forming just for a moment. You get a completely different answer from the actual boiling point of water. The extent to which water can start throwing off, you know, go from the liquid state to break the molecules apart to make steam happens at much lower temperature than you would expect from just calculating the forces between the molecules and so on.
