Lagravi: What we're doing is essentially like domesticating all of these microbes that already exist in our food system. Our goal is to get this to a point where we can, you know, go and invent entirely new types of naturally ferment ed, sustainable produce products. And weeks and months, not hundreds of years yet, i think what's really exciting to us is that we feel like we're really pioneering an entirely new field of science.
