The Relationship Between Saturated Fat Intake and Blood Cholesterol Levels

The seven-country study showed almost a linear association between the level of saturated fat intake and the diet as a percentage of energy. The strongest predictor of differences in blood cholesterol levels between these 16 cohorts was the level ofaturated fat in the diet, and this strongly tied to coronary heart disease risk. But it's one of the few examples that we have of comparing 16 data points with really pronounced differences in average levels of blood cholesterol in each population.
