Health risks from ultra processed foods remained even after they had accounted for their poor nutritional quality. Even getting the right nutrients from other sources at the same time wasn't enough to balance it out. The hypothesis of these studies was that it's literally inflammation, like a lot of these processed foods, increased white blood cell count. It makes your body think it's like consuming something so not meant or not like foreign to the body.
