Fin macke says, i've never considered using cabbage leaves to help hold the vegetables under the brine. Can you reuse some of the older brines as a starter? That's a great question. You want, ian, wouldn't hurt to inoculate your next couple of batches with some of the brine... But i don't know. I've always been concerned about contamination by doing that too. If you want to drink that brine, it's good for you. Maybe there are times when you don't want to eat the vegetables, but you can pour yourself a little a juice glass of the brying rate for children,.
